And that is how Eve Minson came up with her company – JustOneSeed.com. Eve is a landscape architect and a horticulturist – and growing plants for food is her passion. We all know that eating healthy starts with eating locally and seasonally. Sustainable farming starts with educated consumers supporting our local farm markets who, in turn, sell local produce from local farmers. Not only is the food more delicious because it’s seasonal, but you are helping reduce your carbon footprint!
Eve grew up in downtown New York City with a summer home in the Catskills. It was there that she became a nature lover and found she has a major connection to and with nature. She has been a grower for 25 years and even had a business in Ithaca where she did custom growing for clients including design.
What does she want to do with JustOneSeed.com? She wants to grow gardeners and healthy food. Through her work she has seen how eating healthy and gardening changes people –– it means the world to her to see how people transform as they become gardeners. She lives on property that runs a commercial horse-boarding operation which is solar and off the grid – on land in conservation. Right next door their neighbor raises organic livestock. And that is where she has made a beautiful space for people to learn.
While she was at Del Val College she was involved in community–based design projects with students, and she is a former Board member of the Audubon Society.
